Our Pinot Noir grapes were harvested in mid February to late March, were crushed, and then sent to upright stainless steel fermentors for primary fermentation. Fermentation lasted about 10 days at 18-25°C (64‐77°F) with minimal handling to reduce oxidization. After primary fermentation, the wine completed malolactic fermentation to soften the acid structure and mouthfeel. About 15% of our Pinot Noir was aged in French oak barrels prior to bottling.
